Over heating, followed every howto, anything else to try?

My 96 VVC F has just been taken out of mothballs after a year and I have done a huge list of jobs to get it ready for MOT/drivable/upgrades but I cannot for the life of me get it to stop overheating.
I took it out of the garage and drove it home, overheated on the way, only a couple of miles but in London traffic. Coolant was all over the alternator and it poured out as fast as I poured it in so new water pump and cam belt was the obvious first fix. Had problems getting anything but steam out of the engine bleed point so assumed an air blockage and threw in the towel till the next day when I immediately got a nice stream of coolant from it.
Had a hiccup here with an alternator issue on the test drive, it over heated but I also had a loss of power steering indicators and dash lights flashing like a disco so I assumed the fan hadn't kicked in due to lack of power and the nice man at Halfords told me the alternator had gone. Turns out he was wrong I'd just connected it to the wrong terminal on the starter motor when I did the water pump DOH!!
Should say a big thank you :) to the likes of CJJ and other regulars for your how to's, you saved me handing over my first born child to a "professional" to fit a new alternator and a lesson learnt to double check everything especially when tired! :shake:
Anyway ran the car for an hour fans kicked in and out as the should and temp was stable. Next day I was running it to bleed the brakes and it overheated again. No coolant loss other than steam out of the cap. So I changed the cap, ECU sensor thing and thermostat another refill another hour running and a test drive and no problems.
Today wishbones and a few bushes changed and again overheated on the test drive, I'm all out of how to's and idea's. I have had problems bleeding at the engine point and I suspect I may have air in there still but no idea how to get rid of it, once I've got coolant coming through it I've let it flow for as long as it takes to drain about 3/4 of the expansion tank.
I've been at this on and off for a couple of weeks, I have changed everything I can think to change, pressure tested it at the expansion tank and radiator, all fuses are fine, both fans are working, coolant/oil are both clean and clear, hoses are all relatively new and in good condition its just that sometimes it over heats and sometimes its fine.
Thoroughly arsed off at this point, please help me or shoot me, right now I'm open to both!! :sad2:
