Thermostat issue?

The other week while in a drive-through my temp gauge started to go into the red. Drove off 30 secs later and switched off the engine. The coolant boiled and bubbled.
I completely drained the coolant and bled it properly from the screw. Even now there is no signs of mayo, no loss of coolant in the slightest and no film on the coolant.
However when driving after 5 mins of relaxed driving the fan is clicking in, even on cold days... And after idling for like 10 mins after a drive it starts to overheat a little..
Surely the thermostat is the prime suspect? I have ordered a new one from Rimmer Bros and waiting on delivery.
