any car restorers

i am restoring a 1949 phase 1 standard vanguard at the moment,complete body off restoration .i have done the chassis (painted in etch primer) and nearly finished the body welding using the chassis as a jig,now the time has come to lift the body off the chassis again and paint it .my question is how/what should i paint it with ?

my options are :just black paint as original or stone chip then black paint but there are lots of things to bolt back and i think it will scrape/chip off

i want it to look original as possible but still prevent rust as much as i can cheers
