New ZT Owner! In love but need some help

Just picked up a 2002 MG ZT 180.
I'm crazy about this car, in the process of making sure it is ready for its Roadworthy (aussie version of an MOT)
The car has undergone some extensive attention and is looking great.
I have an issue I hope someone can help with.
When I got the car it was idling fine. I know the butterflys have been removed, but the unit was well sealed and was not causing any grief.
In the last week it has developed a hunting idle.
It starts cold or hot fine
When its cold it idles as indicated based no water temp (no hunting)
When its hot it idles down to 750 smooth as (no hunting)
You can rev the car and it purrs beautifully, the problem arises when its coming off acceleration.
You can just blip the accelerator and it will hunt up and down between 500=1000, rest at 900ish then return to 750 smooth again.
I can feel it almost stall when I put pressure on the accelerator.
I have removed the induction manifold to ensure it, along with the VIS assembly is sealed.
I have removed and serviced the AIC unit, this was rather dirty but it seems to work as it appears to be doing all the work finding a sooth measure of air.
I have cleaned the throttle body and have adjusted the accelerator cable.
I have confirmed all the hoses are unbroken and sealed
I don't loose brake boost during the idle hunt
I have also performed the throttle position reset thing with no luck
Frustrating as it idles beautiful until i touch the throttle, sometimes it resumes smooth idle quickly others it sits hunting terribly. Only way it seems to fix itself is if it increases idle then drops it back
Any ideas?
