What's the problem another hgf failure or not as bad?

Hi apologies if this is long but I'm new to this forum and looking for anyone who can give me an honest answer. I've had my mgf it's a 1.8i on a march 2000 bought it with 33k on the clock now has 53,8k on the clock. Had it 4 years in that time I've had a new clutch, water pump, head gasket, timing belt, headlights basically the only thing I've not had is a complete new suspension, gearbox and engine are the only things I've NOT replaced so as much as I love it I'm fed up of it at the minute. Recently I got it back on the road after I had loads of steam blowing it of the I back of it and a Big Bang it sounded like the engine had gone to me.

However a local guy got it going and told me was an air lock and nothing more and passed an mot with no problems. Yesterday 200 miles later having a drive out over the moors (I'm in West Yorkshire) the water temp went from half and jumped all of a sudden into the red I was 8miles from home as did the oil temp immediately I put the heater on full whack on cold and it dropped back to normal. However in traffic the water boiled up the oil temp went back to 130c which is normal for the car but when I revved the car in traffic and drove from the lights the water temp went back down to half. Just before I got it to my local guy steam was boiling up out of the back of it and when I looked all the coolant had gone.

I took it to my local guy who I'm new to as the previous guy I took it to I eventually kept having problems with him little things he never finished off etc so my new garage is a good guy but he told me all I had is an airlock and now I'm confused as to what the problem is as the car was perfect yet 200miles later it's gone pop again any thoughts appreciated thanks :)
