I would fully expect that the cambelt will have been renewed when the head gasket was changed. If there is no record of this being done, I would have it changed anyway - much cheaper than the cosequences of a failed belt!
I would tend to take any claim of a head gasket being renewed with a pinch of salt - some people will happily lie about this because some buyers (erroneously in my view) seem to think that the gasket having been replaced is a plus point - unless it has been done by someone who really knows what is what with these engines and has been done correctly with good quality gasket, the repeat failure rate is quite high.
Brake fluid should be renewed at 2 yearly intervals - if you don't think it has been changed recently, or the fluid in the brake reservoir looks discoloured, I would certainly replace it.
Gearbox oil is not so critical - certainly check that it is up to the correct level and top up if necessary, but whilst a gearbox oil change may be beneficial, it was not required under the service schedule until over 100 thousand miles (and the IB5 gearbox in your car was described as 'filled for life' and doesn't have a dedicated drain plug anyway, although some people have found that removing one of the fixing bolts will allow most of the oil to run out).
