How to check what head gasket I have

The water pump was changed and there was mayo in the coolant. The oil was fine when I changed it. I've had a suspicion the head gasket wasn't changed, but I find this hard to imagine if the oil was fine. Someone told me you can check without taking anything off, but where exactly should i be looking?
